The beauty of nature

What is it that makes people just so sure they can take the "beauty" or "perfection" of nature as an axiomatic assumption, as a point from which to derive further theories?

It seems to be kind of true for mathematics, and probably physics, but as soon as evolution comes to play, everything more or less becomes an approximation at best, from a fairly random starting point...
